فطائر التوت مع كريم شانتيلي

• 2 لفات من المعجنات الجاهزة shortcrust
• 6 صفار بيض
• 5 دل حليب كامل الدسم
• 2.5 دل كريم طازج
• 130 غ سكر
• 70 غ دقيق
• q.b. النعناع
• q.b. فانيليا
• q.b التوت

1- زبدة قوالب الفطائر. مع قطع المعكرونة، وجعل 8 أقراص من لفات جاهزة من المعجنات shortcrust، ثم خط القوالب. بيرس الجزء السفلي مع ظهور شوكة.

2- خط كل ختم مع قطع من الألومنيوم وملئها البقوليات المجففة. خبز الفطائر في الفرن في 180 درجة مئوية لمدة 10-15 دقيقة، وإزالتها على الفور من الفرن والسماح لهم بارد. ثم إزالة البقوليات والألومنيوم وصياغة بلطف قذائف المعجنات shortcrust.

3- نقش جراب الفانيليا عن طريق كشط داخليا وإسقاط البذور الداكنة في الحليب. يغلي الحليب ويجلد صفار بعيدا مع السكر والدقيق. نقل كل شيء إلى قدر. يطهى المزيج على نار متوسطة، ويحرك لمدة 10 دقائق على الأقل، حتى يصبح الكريم سميكا. ثم ندعه يبرد.

4- سوط كريم الباردة جيدا. دمجه بلطف في الكسترد. ثم ملء الفطائر مع كريم شانتيلي التي تم الحصول عليها.

5- تزيين لتذوق مع التوت وأوراق النعناع.
